Pork + Root Roast

40 Minute Pork + Root Roast. So easy, great for all the family.

Serves: 4 Time: 40 minutes
Fresh Ingredients
4 Large Parsnips, cut lengthwise into fries
2 Red Onions, cut into wedges
4 Pork Chops, fat trimmed, or Loin Steaks
Steamed Greens of your choice
Cupboard Ingredients
2.5 Tablespoons Olive Oil
1.5 Tablespoons Wholegrain Mustard
Method
Heat oven to 220°C. Whack all the veg into an oven roasting tin, season and toss well with 2 tablespoons of oil and 1 tablespoon of mustard. Then roast in the oven for 25 mins.
Next pop a large non-stick frying pan over high heat, season the pork and rub any remaining oil on, then fry on both sides until lightly browned.
Finally, give the veg a shuffle, then pop the chops on top. Rub the remaining mustard on the chops and roast everything for a further 15 mins.
When the pork is cooked, serve and enjoy with extra steamed greens.
