30 Minute Pork Souvlaki. Perfect for summer, enjoy!

Serves: 2 Time: 30 minutes
Ingredients
1/2 Cucumber, half diced and the rest grated
1 Garlic Clove, minced
2 x 150g Pork Loin Steaks, fat removed and sliced in half
4 Skewers, soaked in water for 10 mins
1/2 Red Onion, sliced finely
1 Tablespoon Soy Sauce
1 Tablespoon Dried Oregano
1 Tablespoon Honey
125g Cherry Tomatoes, halved
80g Natural Yoghurt
300g Potatoes, peeled and cut into chunky chips
1 Tablespoon Olive Oil
Method
Heat the oven to 220°C. Then combine the soy, honey, oregano, seasoning and olive oil, mix well. Then submerge the pork and allow to marinade for 5 mins.
Toss the chips in the olive oil, season and add the chips to a baking tray and into the oven for 30 mins.
Meanwhile, take the grated cucumber, squeeze any excess water out with your hands then, add to a bowl along with the yoghurt and garlic. Mix well and season.
In another small bowl, add the tomatoes, the remaining cucumber, and red onion. Set aside.
Heat a large non-stick pan over high heat. Then thread the pork onto the skewers. When the pan is hot, add the pork and cook for 2-3 mins per side (making sure it's not pink in the middle). You can add any remaining marinade on top of the pork.
Serve the pork with the chips, mini greek salad and the yoghurt dip on the side!
