15 Minute Power Energy Bowl. Perfect meal-prep bowl for lunches on the go. For me personally, Sunday is Meal Prep Day! I prep my lunches for 3 days choosing a meal prep bowl, then have an easy wrap or leftovers for Thursday-Friday. Set yourself up for a great week of staying on track and get meal prepping these gorgeous bowls.

Serves: 2 Time: 15 minutes
Ingredients
Fresh Ingredients
4 Cooked Beetroots, finely chopped
4 Tablespoons Fresh Mint, chopped
4 Tablespoons Coriander, chopped
1⁄2 Orange, juiced
160g Tenderstem Broccoli, chopped finely
1 Avocado, sliced
60g Feta Cheese, crumbled
Other Ingredients
2 Tablespoon Olive Oil
300g Pre-cooked Puy Lentils
200g Chickpeas, drained
150ml Vegetable Stock
2 Tablespoons Apple Cider Vinegar (if you have it, or use normal vinegar)
Method
Add the oil to a large non-stick pan over high heat, add the lentils, chickpeas and the stock. Cooking for 4 mins until the liquid has been absorbed.
Next add the beetroot, herbs, apple cider vinegar and orange juice, mix well then remove from the heat.
Meanwhile, boil the broccoli in a pan of boiling water until tender, then add them to the mixture and mix well.
Divide the mix between two bowls, add the sliced avocado and crumble the feta on top!
