Prawn Bruschetta

5 Minute Prawn Bruschetta. So fresh and easy to make - perfect for a weekend brunch.

Serves: 2 Time: 5 minutes



  • 1 tablespoon olive oil

  • 1 garlic clove, halved

  • 1 heaped tablespoon dill, roughly chopped

  • Zest and juice ½ lemon, plus wedges, to serve

  • 4 small slices sourdough, or two large cut in half

  • 140g cooked prawns

  • Handful rocket


  1. Mix together the dill, lemon zest and juice, 2 teaspoon olive oil and seasoning to make a dressing.

  2. Brush the slices of bread with remaining oil. Place in a hot griddle pan and toast on both sides until lightly charred.

  3. Rub one side of each slice with the garlic, then add rocket to each slice.

  4. Top with the prawns and then drizzle over the dressing and serve with extra salad if you like.
