20 Minute Prawn Masala. So fresh and healthy, a great take on a Indian classic.
Serves: 4 Time: 20 minutes
Ingredients
2 x 400g Canned Chopped Tomatoes
4 Mini Garlic Naans
2 Red Chillies, sliced
2 Teaspoons Ground Cumin
2 Teaspoons Yellow Turmeric
2 Teaspoons Sugar
2 Garlic Cloves, minced
1 Tablespoon Ginger, grated
1 Bunch Coriander, chopped
350g Raw Peeled King Prawns, you can use pre-cooked if you prefer
2 Tablespoons Veg Oil
Method
Heat the oven to 200°C. Then heat 2 tablespoons of vegetable oil in a large pot over medium heat. When hot, add the turmeric and stir to combine.
Then add the garlic, ginger, chilli and cook until fragrant. Add the prawns to a bowl and coat with the cumin and some seasoning. Toss well and set aside.
Next, add the canned tomatoes to the pot with the herbs, then add one can of water, seasoning and 2 teaspoons of sugar to the pan and mix well. Cover and cook for 4 mins more.
Meanwhile, add the naans to the oven to warm through.
Finally, add the prawns to the tomatoes, and cook for 2 mins, until they are fully cooked then stir through half the coriander.
Serve the Prawn Masala in bowls with the warm naans and an extra sprinkle of coriander on top!
