Super easy alternative to a protein shake, packed with protein and vitamins!

Serves: 4 Time: 15 minutes
Ingredients
225g cottage cheese
80g rolled oats
5 eggs
2 tsp cinnamon
1 tbsp maple syrup
2 tbsp olive or coconut oil
Toppings
Sprinkle of icing sugar
Banana, sliced
40g walnuts, crushed
Method
Whack all the ingredients (not the oil, or toppings) into a blender and blitz until smooth.
Heat ¼ of the oil in a large frying pan over a low-medium heat, then pour around 50g of batter per pancake, cook until you start to see bubbles form on the surface of the pancakes, around 1-2 mins. Then flip and cook for another minute or until golden brown on both sides.
Repeat until you’ve used all the batter. Top the pancakes with banana and walnuts and serve!
