30 Minute Quorn Cottage Pie. Traditional cottage pie perfect for a cold day when you just want British home comfort food. Easy peasy!
Serves: 2 (easily doubled) Time: 30 minutes
Ingredients
400g Potatoes, peeled and cut into cubes
1 Red Onion, diced
2 Garlic Cloves, minced
250g Quorn Mince, or other meat-free mince
2 Tablespoons Tomato Puree
2 Tablespoons Worcestershire Sauce
1 Knorr Stock Pot, mushroom or vegetable
120g Peas
Unlimited broccoli, or other steamed greens
Method
Boil your potatoes until soft and ready for mashing, about 15 minutes.
Next, heat a drizzle of olive oil in a large pan over medium heat. Throw in the mince, breaking up the mince with a wooden spoon. Cook for 5 minutes, then throw in the red onion. Cook for a further 4 minutes.
Once done, throw in the garlic, tomato puree and Worcestershire sauce, stir to combine for 1 minute. Next throw in 150mls of water, along with the stock. Bring to a boil, then turn the heat down to simmer for 5 minutes.
Meanwhile, mash your potatoes. Once the mince and sauce and thickened, throw in the peas, stir through.
Next, add your mince to a ovenproof dish, top with the mash and smooth over the mince with a fork, season with salt and pepper and into the oven for 15 minutes, or until the top is crispy.
Finally, steam your green veggies and serve alongside your cottage pie. Yum!
