Red Pesto Chicken Ciabatta

25 Minute Red Pesto Chicken Ciabatta. Oh yes, no words needed...

Serves: 4 Time: 25 minutes


Fresh Ingredients

  • 2 Chicken Breasts, cut in half like a burger

  • 100g Rocket

  • Extra Side Salad (optional)

  • 2 Ciabatta Rolls, half per person

Cupboard Ingredients

  • 4 Potatoes, cut into fries

  • 1 Tablespoon Dried Oregano

  • 2 Tablespoons Red Pesto

  • 2 Tablespoons Mayonnaise

  • 1 Tablespoon Veg Oil

  • 1 Tablespoon Olive Oil


  1. Heat the oven to 220°C. Toss the fries in 1 tablespoon of veg oil, then pop them into the oven for 25 mins, until nice and crisp.

  2. Meanwhile, toss the chicken in the oregano and season well. Heat a large non-stick pan with the olive oil, when hot add the chicken and cook evenly, a few mins each side.

  3. In a small bowl mix the mayo and pesto together then set aside.

  4. Pop the ciabatta into the oven for a few mins to crisp up.

  5. When everything is ready, serve the chicken on the warm ciabatta half bun with a dollop of the pesto mayo. Pop the fries and fresh rocket to the side and enjoy!
