Roasted Butternut & Chicken Legs

75 Minute Roasted Butternut & Chicken Legs. Easy peasy, whack it all on a tray and into the oven. Minimal prep and tastes so fresh and yummy!


Serves: 4 Time: 75 minutes

 

Ingredients

  • 1 butternut squash, peeled and cut into 3/4-inch pieces

  • 2 gala apples, peeled and cut into 3/4-inch pieces

  • 1 tablespoon sage, chopped

  • 50mls olive oil

  • 4 whole chicken legs

  • 1 tablespoon unsalted butter, thinly sliced

  • serve with: steamed greens of your choice

Method

  1. Heat the oven to 200°C. In a large roasting pan, toss the squash, apples and sage with the olive oil and season with salt and pepper. Season the chicken legs and set them on top. Dot with the butter and roast for about 1 hour and 15 minutes, until the squash and apples are tender and the chicken is browned and cooked through.

  2. Meanwhile steam your veggies of choice and serve when everything is ready.
