Roasted Fish with Zesty Peppers

45 Minute Roasted Fish with Zesty Peppers. So fresh and healthy, a great dish to entertain friends with or show off!

Serves: 4 Time: 45 minutes


Ingredients

  • 400g thick skinless boneless salmon fillet, cut into 8

  • 400g thick skinless boneless cod loin, cut into 8

  • 2 tablespoon olive oil

  • 2 oranges, juiced and zest from 1

  • 45g raisins

  • 3 red/orange peppers, halved, seeded and each half cut into 3

  • Large handful flatleaf parsley, roughly chopped

  • 30g white basmati rice per person (dry weight)

Method

  1. Place the fish in a large bowl, add 1 tablespoon of the olive oil, orange zest and season well. Carefully toss the fish to coat, cover and leave to marinate in the fridge if you have time. Put the raisins into a small bowl, pour over the orange juice and set to one side. Heat oven to 200°C.

  2. Place the peppers in a large shallow, ovenproof pan or large shallow roasting tray and drizzle with the remaining olive oil. Season, toss together and roast in the oven for 30 mins.

  3. Arrange the fish and raisins on top of the peppers and pour over the juices. Season with a good pinch of salt and cook in the oven for 12-15 mins until the fish is just cooked through.

  4. Scatter with parsley and serve with white basmati rice.
