30 Minute Rosemary Crusted Chicken. Perfect for date night, this rosemary crusted chicken is delish!

Serves: 2 Time: 30 minutes
Ingredients
2 Sprigs Rosemary, leaves finely chopped
Lemon, zested and cut into wedges
360g Chicken Thighs
100g Panko Breadcrumbs
20g Parmesan Cheese, grated
2 Garlic Cloves, minced
300g Potatoes, peeled and cubed
1 Pack Vine Tomatoes
1 Teaspoon Of Olive Oil
Method
Heat the oven to 200°C. Then combine the breadcrumbs with the lemon zest, parmesan, chopped rosemary and 1 teaspoon of olive oil.
Pat the chicken dry with a kitchen paper then season well. Pop into an oven proof dish. Spread the breadcrumb mix on top of each thigh.
Next wrap the garlic in some foil and bake it in the oven along with the chicken for 25 mins.
Meanwhile pop the potatoes in a pot of cold salted water, bring to a boil and remove when tender, drain and allow to air dry.
When the chicken has been cooking for 15 mins, add the vine tomatoes to the same dish as the chicken, along with any leftover rosemary sprigs and a pinch of salt. Toss them around and continue to bake for 10 mins.
When potatoes are ready, mash them up along with the foil roasted garlic.
Once everything is done, divide the garlic mashed potatoes between two plates, top with the chicken, tomatoes and a wedge of lemon!
