Rosemary, Tomato & Olive Chicken

25 Minute Rosemary, Tomato & Olive Chicken. Really lovely dish, and so easy to make!

Serves: 2 Time: 25 minutes



  • 2 teaspoon olive oil

  • 2 chicken breasts, sliced

  • 1 large onion, chopped

  • 2 cloves garlic,

  • Pinch of chilli flakes, crushed

  • small bunch of rosemary, chopped

  • 1 tin of chopped tomatoes

  • 8 black olives, pitted

  • 100ml chicken stock


  1. Heat 2 teaspoon oil and brown the sliced chicken for 2-3 minutes. Add all other ingredients except the olives and cook for 20 minutes.

  2. Then add the olives and serve with a big watercress and avocado salad.
