30 Minute Satay Sweet Potato Curry. Highly recommend you to try this, the flavours are spot on - if I do say so myself hehe.

Serves: 4 Time: 30 minutes
Ingredients
Fresh Ingredients
500g Sweet Potato, peeled and cut into chunks
400ml Canned Coconut Milk
200g Bag Spinach or other veg that needs using up. Feel free to add it in!
1 Lime, juiced
Cupboard Ingredients
1 Tablespoon Olive Oil
1 Onion, chopped
2 Garlic Cloves, minced
1 Piece Ginger, grated
3 Tablespoons Thai Red Curry Paste
2 Tablespoons Peanut Butter (Smooth or Crunchy, depending what you prefer texture wise)
2 Packs Microwavable Rice or 50g dry weight per person
Method
Heat the olive oil in a deep saucepan, add the onion and saute until softened, then add the garlic and ginger, cooking for 1 minute more.
Next, add in the curry paste, peanut butter and sweet potato, coconut milk and 200ml water.
Bring everything to a boil, then reduce to simmer for 25 mins or until the sweet potato is soft.
Once done, stir through the spinach and the juice of the lime, and season well.
Heat the rice according to the package instructions. Serve the curry on top of your rice, and wowzers - so yum!
