Scrambled Bagel

5 Minute Scrambled Bagel. So easy to make and perfect for a weekend brunch packed full of protein!

Serves: 2 Time: 5 minutes


 

Ingredients

  • 4 Eggs

  • 1/4 Teaspoon Chilli Flakes (optional)

  • 1 Tomato, finely chopped

  • 1/2 Red Bell Pepper, finely chopped

  • 2 Tablespoons Milk (optional)

  • 2 Bagels, toasted

  • Handful of Baby Spinach

  • Salt & pepper

Method

  1. Add a tiny amount of olive oil to a saucepan and gently fry the pepper, tomato and chilli flakes until just softened. Remove from the heat.

  2. Next, beat the eggs in a bowl, add the milk if you like - then season with a little salt and pepper.

  3. Pour the beaten eggs into the saucepan and place over a medium heat. Continue stirring until the eggs are lightly scrambled.

  4. Spoon onto toasted bagels, top with the tomato and pepper mixture and serve with raw baby spinach.
