5 Minute Scrambled Bagel. So easy to make and perfect for a weekend brunch packed full of protein!

Serves: 2 Time: 5 minutes
Ingredients
4 Eggs
1/4 Teaspoon Chilli Flakes (optional)
1 Tomato, finely chopped
1/2 Red Bell Pepper, finely chopped
2 Tablespoons Milk (optional)
2 Bagels, toasted
Handful of Baby Spinach
Salt & pepper
Method
Add a tiny amount of olive oil to a saucepan and gently fry the pepper, tomato and chilli flakes until just softened. Remove from the heat.
Next, beat the eggs in a bowl, add the milk if you like - then season with a little salt and pepper.
Pour the beaten eggs into the saucepan and place over a medium heat. Continue stirring until the eggs are lightly scrambled.
Spoon onto toasted bagels, top with the tomato and pepper mixture and serve with raw baby spinach.
