Seared Duck + Crispy Potatoes

25 Minute Seared Duck + Crispy Potatoes. If you like duck, this dish is for you! Bloody banging.

Serves: 2 Time: 25 minutes


 

Ingredients

  • 300g New Potatoes, halved lengthways

  • 1 Tablespoon Olive Oil

  • 1 Bunch Asparagus

  • 1 Pack Tenderstem Broccoli

  • 2 Tablespoons Chives, chopped finely (optional)

  • 2 Duck Breasts, patted dry with kitchen paper

  • 1 Pack Vine or Cherry Tomatoes

Method

  1. Bring the potatoes to a boil in a pot of salted water. Once done, drain and set aside.

  2. Season the duck with salt and pepper, then place skin-side down in a hot large non-stick pan. Cook over medium heat until the skin is crispy around 15 minutes, discard any excess fat. Once crisp, turn the breast over and cook for a further 2 mins. Remove and allow to rest.

  3. Meanwhile, toss the potatoes in olive oil and season. Heat a large pan over a high heat, add potatoes and toss them around, until the skins begin to crisp up.

  4. Next add broccoli and asparagus and a splash of water to the pan used for duck over medium heat. Cover and cook for 3 minutes. Uncover, and increase heat to medium high, and add the tomatoes. Cook until the broccoli is tender and tomatoes burst. Season then remove from the pan.

  5. Finally, slice the duck and serve with crispy potatoes, veg and a sprinkling of chives on top!
