Slow Cooker Cauliflower Curry

Slow Cooker Cauliflower Curry. Super easy and so many flavours!

Serves: 6 Time: 4 hours



  • 1 large cauliflower, leaves and stems removed

  • 1 red pepper, thinly sliced

  • 4-5 small potatoes, quartered

  • 1/2 onion, chopped

  • 2 garlic cloves, sliced

  • Optional - toasted cashews & chopped coriander for garnish

(For the curry sauce)

  • 480ml vegetable broth

  • 460ml canned coconut milk (unsweetened)

  • 2 tablespoons yellow curry powder

  • 1 teaspoon cumin

  • 1/2 teaspoon black pepper


  1. Throw into the slow cooker - the cauliflower, red peppers, potatoes, garlic and onions.

  2. Next, in a medium bowl whisk together the veg broth, curry powder, cumin, and black pepper. Pour the mixture into the slow cooker and stir well to coat all the veggies.

  3. Cover and cook on high for 2-3 hours or on low 4-5 hours.

  4. Approx 10-15 minutes before serving, stir in the coconut milk and season if you like.

  5. Serve with toasted cashews and chopped coriander on top if you like!
