20 Minute Smokey Carbonara. Vegetarian carbonara, creamy pasta with lentils. Yum!
Serves: 4 Time: 20 minutes
Ingredients
4 Tablespoons Creme Fraiche
80g Cheese, finely grated
6 Whole Sun-Dried Tomatoes, finely chopped
300g Spaghetti
200g Cooked Puy Lentils
2 Teaspoons Smoked Paprika
Small Bunch Of Fresh basil, chopped (optional)
Method
Cook the spaghetti according to the package instructions. Drain (reserving a little water) and return to the pot.
Add the creme fraiche, tomatoes, lentils, paprika and cheese, then return to the heat, cook until the cheese has melted, around 2 mins. Add the reserved pasta water if you think it needs it.
Mix well and season with salt and pepper.
Once everything has melted, top with fresh basil, serve and enjoy!
