Smoky Pork Rice

20 Minute Smoky Pork Rice. Great for lunch too, love this dish!

Serves: 4 Time: 20 minutes


 

Fresh Ingredients

  • 1 Apple, cut into small chunks

  • 1 Bunch Coriander, chopped

  • 400g Pork Mince

  • 2 Spring Onions, sliced

Cupboard Ingredients

  • 2 Chicken Stock Cubes

  • 4 Tablespoons Chipotle Paste

  • 800g Black Beans, drained

  • 2 Packs Microwavable Basmati Rice

  • 2 Teaspoons Ground Cumin

  • 1 Tablespoon Veg Oil

Method

  1. Heat a large non-stick pan over medium heat. Add 1 tablespoon of veg oil then when hot add the mince and cook until beginning to brown.

  2. Then add the chipotle, cumin and crumble over the stock cubes. Mix well then add the black beans and a splash of water just to loosen the spices up.

  3. Meanwhile, cook the rice according to the package instructions. When done add the rice to the pan.

  4. When everything is combined and the liquid is absorbed. Remove from the heat then stir in the apple, coriander and spring onions.

  5. Serve in bowls and enjoy!
