Smoky Pork Tacos

20 Minute Smoky Pork Tacos. Tacos and tequila please! Enjoy these Mexican tacos and you'll almost feel like you're on a beach sipping tequilas.

Serves: 4 Time: 20 minutes
Ingredients
480g Pork Mince
2 Red Onion, sliced
2 Little Gem Lettuce, chopped
1 Lime, juiced and cut into wedges
2 Tablespoons Chipotle or Harissa sauce/paste
200mls Chicken Stock
250g Cherry Tomatoes, halved
2 x Canned Black Beans (400g), drained and rinsed
2 Tablespoons Tomato Puree/Paste
8 Small Wraps
Extra salad if you like
Method
Heat your oven to 200C. Throw in half of the red onion into a bowl with the lime juice and a pinch of salt and sugar. Stir to combine and set aside to pickle.
Next, heat a drizzle of oil in a large pan, once hot throw in the pork mince and cook stirring well to break up the mince for 5 minutes. Once done, whack in the remaining onions and continue to cook for 3 minutes.
Next, throw in half of the tomato puree and half of the chipotle paste. Stir to combine for 1 min, then throw in your chicken stock.
Once you've done that, throw in your drained black beans and using a potato mash or the back of your spoon crush them a little before bringing everything to a simmer. Cook for a further 5 minutes. Add a splash more water if you think it needs it.
Once everything is cooked, heat your wraps in the oven and serve topped with the chopped lettuce, then the pork mince, halved cherry tomatoes, the pickled red onions and a lime wedge. Yum!
