Speedy Chargrilled Veg Gnocchi

10 Minute Speedy Chargrilled Veg Gnocchi. Super yum and filling!

Serves: 2 Time: 10 minutes



  • 400g gnocchi

  • 200g chargrilled vegetables - you can use whatever veg you have left in the fridge and chargrill them. or alternatively, you could get some already made from the deli counter in any supermarket

  • 3 tbsp pesto

  • handful of basil leaves

  • 50g parmesan, grated

  • extra salad if you like


  1. Boil a large pan of salted water. Add the gnocchi, cook for 2 mins or until it rises to the surface, then drain and tip back into the pan with a splash of reserved pasta water.

  2. Add the chargrilled veg, chopped into pieces if large, pesto and basil leaves. Cook through for a few minutes to warm the veg.

  3. Serve topped with grated Parmesan and extra salad if you like!
