Speedy Pesto Pasta

10 Minute Speedy Pesto Pasta. So easy to make and super quick!

Serves: 4 Time: 10 minutes



  • 250g Shell Pasta, medium sized

  • 250g Asparagus, trimmed

  • 2 Tablespoons Olive Oil

  • 8 Tablespoons Basil Pesto

  • 7 Sun Dried Tomatoes, cut thinly

  • 75g Mozzarella Cheese, diced

  • 2 Eggs, fried


  1. Heat oven to 220°C and lightly grease a baking tray, place the asparagus on, season and bake for 10 mins.

  2. Cook pasta according to the package instructions.

  3. Once the pasta is ready, combine all ingredients, add the asparagus, mix well and serve with a fried egg on top (fried egg with dinner and not lunch). Super easy!
