Spiced Aubergine Pie

35 Minute Spiced Aubergine Pie. Tastes amazing - I promise!

Serves: 4 Time: 35 minutes



  • 2 Tablespoons Olive Oil

  • 2 Large Aubergines cut into chunks

  • 2 Red Onions, diced

  • 2 Garlic Cloves, grated

  • 2 Tablespoons Harissa Paste

  • 2 Tablespoon Ground Coriander

  • 400g Cherry Tomatoes

  • 250g Cooked Lentils

  • 1 Bunch Fresh Parsley

  • 1kg Sweet Potatoes


  1. Heat 2 tablespoons oil in a large frying pan over medium heat. Saute the aubergines off for around 10 mins. Once nice and golden, remove and set aside.

  2. Fry the onions off in the rest of the oil, until translucent. Add garlic, 1 tablespoon of the harissa paste, and the ground coriander and cook until nice and fragrant.

  3. Add the aubergines back to the onion mixture along with the tomatoes, lentils and a can of water. Then bring to a simmer and allow to cook for around 10 mins. Then stir in the parsley.

  4. Meanwhile, peel and chop the potatoes and boil in a pan of water until soft enough to mash. Once they are ready to be mashed you can stir the harissa through the mash to add some extra flavour.

  5. Pop the aubergine mixture into an ovenproof dish and cover with the sweet potato mash. Finally, turn the grill on to its highest setting and pop the dish under the grill to crisp up the top (around 10 mins).
