Breakfast packed with protein, perfect for breakfast or a weekend lunch in a rush!
Serves: 2 Time: 15 minutes
Ingredients
1 tbsp olive oil
1 large onion, chopped
2 garlic cloves, crushed
300g mushrooms
450g spinach
4 eggs
Handful parsley, chopped
1 folded flatbread per person (105 cals) or you can use any bread as long as 100 cal limit
Method
Heat the oil in a large pan over medium heat, add the onion and garlic and cook for 2-3 mins until softened. Next, throw in the mushrooms and cook for another 3-4 mins, season well.
Now start adding the spinach to the pan, you will likely have to do this in batches. Cover the pan with a lid and let it wilt, repeat this until all spinach is used.
Make 4 gaps in the spinach and break an egg into each one. Cook for 5-6 mins covered with a lid until the egg whites are set.
Serve with fresh parsley and a folded flatbread for dunking!
