Spinach Shakshuka

Breakfast packed with protein, perfect for breakfast or a weekend lunch in a rush!



Serves: 2 Time: 15 minutes

 

Ingredients

  • 1 tbsp olive oil

  • 1 large onion, chopped

  • 2 garlic cloves, crushed

  • 300g mushrooms

  • 450g spinach

  • 4 eggs

  • Handful parsley, chopped

  • 1 folded flatbread per person (105 cals) or you can use any bread as long as 100 cal limit


Method

  1. Heat the oil in a large pan over medium heat, add the onion and garlic and cook for 2-3 mins until softened. Next, throw in the mushrooms and cook for another 3-4 mins, season well.

  2. Now start adding the spinach to the pan, you will likely have to do this in batches. Cover the pan with a lid and let it wilt, repeat this until all spinach is used.

  3. Make 4 gaps in the spinach and break an egg into each one. Cook for 5-6 mins covered with a lid until the egg whites are set.

  4. Serve with fresh parsley and a folded flatbread for dunking!
