Spinach Stuffed Sweet Potato

40 Minute Spinach Stuffed Sweet Potato. A nice twist of a classic jacket potato - I'm in love!

Serves: 2 Time: 40 minutes



  • 2 Large Sweet Potatoes

  • 1 Tablespoon Olive Oil

  • Black Pepper

  • 1 Small Bag Baby Spinach

  • 1 Small Bag Kale, leaves torn

  • 1/2 Avocado, diced

  • Bunch Spring Onions, sliced thin

  • Balsamic Glaze (optional)

  • Coriander for garnish (optional)

  • Extra side salad if you like


  1. Heat oven to 200°C. Bake the sweet potatoes in the oven for approx 40mins (or once the sweet potato is tender).

  2. Once done, cut the sweet potato in half.

  3. Heat the oil in a large pan over medium-high heat. Add the spinach, kale, and pepper, tossing to coat in the oil.

  4. Cook, stirring frequently, until the greens are wilted, but still bright in colour.

  5. Top each half of the sweet potato with the cooked greens, diced avocado, spring onions and coriander.

  6. Drizzle with balsamic glaze if you like!
