Steak & Caramelised Onion Roasties

30 Minute Steak & Caramelised Onion Roasties. Steak night at it's finest, yummy caramelised onion roasties are the perfect addition!


Serves: 2 (easily doubled) Time: 30 minutes

 

Ingredients

  • 2 x Steaks, 350g total (take out of the fridge early so they are room temperature)

  • 200g White Potatoes, sliced into 2cm chunks

  • 1 Garlic Clove, minced

  • 1 Red Onion, sliced

  • 2 Tablespoons Olive Oil

  • Asparagus Spears

  • Bag of Rocket

Dressing

  • 1/2 Tablespoon Olive Oil

  • 1 Tablespoon Balsamic Vinegar

  • 1 Teaspoons Wholegrain Mustard

  • Crushed Garlic Clove

  • Black Pepper

Method

  1. Heat the oven to 200C, then throw the chopped potatoes onto a baking tray, drizzle with 1 tbsp olive oil, salt and pepper and then mix to coat well. Cook for 25-30 minutes, turning once, until golden and crispy.

  2. Meanwhile, heat half a tablespoon of oil in a medium sized frying pan, add the asparagus along with the minced garlic, salt and pepper, and cook for around 2 mins on a high heat. Next reduce the heat to the lowest setting and place a lid over the pan and continue to cook for 5-6 minutes. Longer if you prefer your asparagus softer.

  3. Meanwhile prepare your dressing and plate up your salad with the cooked asparagus on top.

  4. Next, heat the remaining half a tablespoon of oil in the same pan as the asparagus was (no need to wash the pan). Add your sliced onions and cook on a medium-low heat until they are caramelised for 10 minutes. If they start to burn, reduce the heat and add a splash of water.

  5. Once the potatoes are nearly done, heat a griddle pan on the highest heat. Season your steaks with salt and pepper and a little drizzle of olive oil massaged into the meat. When the pan is nice and hot add the steak and sear for 1 minute on each side on the highest heat. Then reduce the heat to medium and continue to cook for 1-2 minutes on each side. Cook for longer if you prefer it more well done.

  6. Once ready, serve your steaks with the crispy potatoes mixed well with the onions, your rocket salad and asparagus, and your dressing drizzled on top. Yum!
