15 Minute Steak Melt Sandwich. Steak in bread with caramelised onions and tons of cheese, is this really on plan? Oh yes!

Serves: 2 Time: 15 minutes
Ingredients
1 1/2 Tablespoons Olive Oil
1 Ciabatta Roll, halved
1 Garlic Clove, minced
2 British Thick Flank Steaks
1 Red Onion, sliced
1/2 Tablespoon Vinegar
1/2 Tablespoon Sugar
40g Cheddar Cheese, cut into slices
Green Salad, of your choice
Method
Pat the steaks dry with a paper towel then drizzle each side with oil and season well.
Heat a large non-stick pan over a high heat, when nice and hot add the steaks and cook for 1 minute each side. Transfer to a plate and cover until time to serve.
In the same pan, heat another tablespoon of olive oil, add the onion season and saute until translucent. When soft add the sugar, vinegar and a splash of water, reduce the heat and simmer for 10 mins.
You can now pop the ciabatta in the oven for a few mins to heat and crisp up.
Finally, build your steak melt with sliced steak, onion relish, and top with cheese. Pop it under the grill to melt the cheese and finish with a big fresh green salad.
