Sticky Quorn Noodles

20 Minute Sticky Quorn Noodles. Super quick on the table and so many flavours!

Serves: 2 Time: 20 minutes


 

Ingredients

  • 300g Quorn Mince, or other meat-free mince

  • Handful Coriander, chopped

  • 1 Lime, juiced

  • 4 Tablespoons Ketjap Manis (thicker & sweeter soy sauce)

  • 2 Tablespoon Rice Vinegar

  • Egg Noodles, 1 Nest per person

  • 1 Red Bell Pepper, sliced

Method

  1. Heat a pan of water to boiling, ready for the noodles.

  2. Next, heat a drizzle of olive oil in a large pan over medium heat. Throw in the mince, breaking up the mince with a wooden spoon. Cook for 5 minutes.

  3. Meanwhile, add the ketjap manis, rice vinegar and the juiced lime in a small bowl and mix well. Set aside for later.

  4. Once the mince has cooked for 5 minutes throw in the peppers and cook for a further 4 minutes. At this point throw in the noodle nests to the boiling water and cook for 4 minutes. Once done, drain and set aside.

  5. Next, throw the sauce you made into the pan and mix everything together well for 1 minute.

  6. Finally, throw in the cooked noodles and combine everything together for a minute or 2. Serve with the chopped coriander on top and enjoy!
