Sticky Thighs & Loaded Fries

20 Minute Sticky Thighs & Loaded Fries. Just wow. Try it!


Serves: 2 Time: 20 minutes

 

Ingredients for the Chicken

  • 300g chicken thighs (skin on and boneless), cut into quarters

  • 3 tablespoons soy sauce

  • 2 garlic cloves, minced

  • 1 tablespoon honey

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1 teaspoon pepper

  • 1 teaspoon sesame seeds (optional)

Ingredients for the Fries

  • 200g white potatoes, sliced into fries (or use frozen)

  • 1 tablespoon peri peri mayo

  • handful jalapenos, chopped (optional)

  • handful cherry tomatoes, diced

  • handful coriander, chopped

  • vegetable oil for frying

  • extra salad of your choice


Method

  1. Throw the chicken in a bowl and add all the ingredients from the chicken list. Mix together to combine so all the chicken pieces are fully covered.

  2. Next, you can either whack the fries onto a baking tray and bake in the oven for 20-25 mins until crispy. Or you can heat vegetable oil in a wok until very hot and throw your fries into the hot oil for 5 minutes until crispy. Make sure to be careful of spitting oil and place the fries onto kitchen roll after to blot out some of the oil.

  3. Meanwhile, heat a drizzle of olive oil in a large pan over high heat. Once hot, add the chicken thighs skin side down, cook for 3-4 minutes until you start seeing the skin browning and crispy, then turn the thighs over and cook for a further 2-3 minutes. Make sure there is no pink in the middle

  4. Meanwhile, prep all your salad bits for the loaded fries.

  5. Once everything is done, load up your fries with the salad bits and a drizzle of peri peri mayo. Serve with your cooked chicken thighs and extra side salad. YUM!!!
