Superfood Breakkie

Veggie breakfast or lunch so easy to make and packed with superfoods!



Serves: 2 Time: 15 minutes

 

Ingredients

  • 300g broccoli

  • 2 tbsp olive oil

  • 1 garlic clove, minced

  • ¼ onion, chopped

  • 20g pumpkin seeds

  • 20g dried cranberry (optional)

  • Lemon juice

  • 4 eggs

  • Spices - ½ tsp or turmeric, chilli flakes, paprika, oregano


Method

  1. Chop the broccoli into tiny pieces or blitz in a blender to make a rice consistency.

  2. Heat 1 tbsp oil in a pan on medium-high heat and add the garlic, onion, seeds and fry for 5 mins, until browned. Stirring constantly.

  3. Next, throw in the cranberries, broccoli rice and all the spices. Season well and fry for 5-7mins. If it starts to burn add a little water. Once done squeeze over the lemon juice and mix well.

  4. In another pan, fry your eggs with the remaining oil to your liking.

  5. Serve topped over the veggie mix and enjoy!
