20 Minute Sweet Balsamic Halloumi. The combo of balsamic and halloumi is a winner, if you haven't tried it yet - get it on your list!
Serves: 4 Time: 20 minutes
Ingredients
2 Red Peppers, diced
450g Halloumi, sliced into 16
240g Couscous
2 Garlic Cloves, minced
120ml Balsamic Vinegar
1 Teaspoon Sugar
2 Tablespoons Olive Oil
Optional Extras
50g Sultanas
Handful Fresh Basil, chopped
Method
Heat a large non-stick pan with 2 tablespoons of oil in, when hot add the garlic and sauté gently for around 1 minute.
Add in the sultanas and couscous, mix well then add 400ml of boiled water. Bring to a boil in the pan then remove from the heat and cover until serving.
Heat a large non-stick frying pan, add the vinegar and sugar. When it begins to bubble add the halloumi and cook for around 2 mins per side. You may need to do this in batches.
Meanwhile, fluff the cooked couscous with a fork, add the red pepper and basil, season and divide between plates.
Top the couscous with the halloumi and any remaining glaze from the pan.
