Sweet Balsamic Halloumi

20 Minute Sweet Balsamic Halloumi. The combo of balsamic and halloumi is a winner, if you haven't tried it yet - get it on your list!


Serves: 4 Time: 20 minutes


 

Ingredients

  • 2 Red Peppers, diced

  • 450g Halloumi, sliced into 16

  • 240g Couscous

  • 2 Garlic Cloves, minced

  • 120ml Balsamic Vinegar

  • 1 Teaspoon Sugar

  • 2 Tablespoons Olive Oil

Optional Extras

  • 50g Sultanas

  • Handful Fresh Basil, chopped


Method

  1. Heat a large non-stick pan with 2 tablespoons of oil in, when hot add the garlic and sauté gently for around 1 minute.

  2. Add in the sultanas and couscous, mix well then add 400ml of boiled water. Bring to a boil in the pan then remove from the heat and cover until serving.

  3. Heat a large non-stick frying pan, add the vinegar and sugar. When it begins to bubble add the halloumi and cook for around 2 mins per side. You may need to do this in batches.

  4. Meanwhile, fluff the cooked couscous with a fork, add the red pepper and basil, season and divide between plates.

  5. Top the couscous with the halloumi and any remaining glaze from the pan.
