Sweet Chilli Cyprus Bowl

10 Minute Sweet Chilli Cyprus Bowl. Perfect meal-prep bowl for lunches on the go. For me personally, Sunday is Meal Prep Day! I prep my lunches for 3 days choosing a meal prep bowl, then have an easy wrap or leftovers for Thursday-Friday. Set yourself up for a great week of staying on track and get meal prepping these gorgeous bowls.

Serves: 4 Time: 10 minutes



  • 4 Tablespoons Sweet Chilli Sauce

  • 450g Halloumi, sliced in half lengthways

  • 2 Courgettes, cut into chunks

  • 2 Carrots, peeled in ribbons

  • 1⁄2 Cucumber, peeled in ribbons

  • 2 Packs of Microwavable Grains, of your choice (Merchant Gourmet are nice)

  • 100g Rocket

  • 1 Tablespoon Olive Oil

  • 80g Pomegranate Seeds

  • 2 Lemons, juiced

  • 3 Tablespoons Olive Oil


  1. Add the lemon juice to the sweet chilli and set aside.

  2. Heat a large non-stick pan with the olive oil in, when hot add the halloumi slices and the courgette around the edges. Flip the halloumi when browned on one side and toss the courgette making sure it is evenly cooked. Once done remove and set aside.

  3. Meanwhile heat your grains per pack instructions.

  4. Toss the carrots and rocket together and divide between plates, along with your grains. Top each plate with the courgette and a slice of halloumi.

  5. Sprinkle the pomegranate seeds on top and serve with your lemon and sweet chilli dressing.
