Sweet Potato Nachos

15 Minute Sweet Potato Nachos. With a homemade cheese sauce, perfect for movie night!


Serves: 4 Time: 15 minutes

 

Ingredients

Nachos

  • 2 Large Sweet Potatoes

  • 1 Tablespoon Olive Oil

  • 1 Teaspoon Chilli Powder

  • 1 Teaspoon Cumin

  • 1 x Can Refried Beans

  • 1 x Small Can Sweetcorn

  • 185g Tortilla Chips, broken in half

  • 1 Bunch Coriander, chopped

Cheesy Sauce

  • 1/2 Teaspoon Butter

  • 1 Garlic Clove, minced

  • 350ml Milk

  • 2 Tablespoons Flour

  • 1/4 Teaspoon Salt

  • 250g Grated Cheese (50g for the sauce, 50g for topping)

Method

  1. Pierce the potatoes with a fork, wrap them in paper towels and microwave for 4 minutes on high. Once ready, chop into wedges and coat with the olive oil, chilli, cumin and salt & pepper.

  2. Heat the grill and pop the potatoes under for a few minutes on either side until crispy. Next, heat the beans in the microwave for a few mins until warmed through.

  3. Meanwhile, in a non-stick frying pan, add the sweetcorn and dry roast them until golden brown.

  4. On a large oven tray or dish, arrange the tortilla chips, with the sweet potato and top with the black beans, and sweetcorn and bake for 7 minutes.

  5. While they are roasting, melt the butter in a small saucepan, add garlic, and saute for 2 minutes. Add half the milk and heat until it reaches a gentle simmer. Add the remaining milk with the flour and stir until it thickens.

  6. Remove from the heat, season and add the grated cheese. Serve the cheesy sauce on top of the nachos with sprinkled coriander and some extra grated cheese. Wowzers, enjoy!
