Sweet Potato Pie

35 Minute Sweet Potato Pie. Proper home comfort food, vegetarian but packed with protein.

Serves: 4 Time: 35 minutes


Fresh Ingredients

  • 650g Sweet Potatoes, peeled and cut into cubes

  • 150g Mushrooms

  • 4 Spring Onions, sliced

  • Green Veg of your choice to serve with

Cupboard Ingredients

  • 1 x Can Black Beans, drained and rinsed

  • 1 x Can Kidney Beans, drained and rinsed

  • 1 x Can Chopped Tomatoes, or sub for paste or passata

  • 1 Red Onion, diced

  • 2 Garlic Cloves minced

  • 1 Tablespoon Brown Sugar

  • 1 Teaspoon Paprika

  • 1 Tablespoon Olive Oil

Optional Ingredients

  • Handful Fresh Coriander, chopped

  • 2 Tablespoons Milk


  1. Heat oven to 200°C. Next, boil the potatoes until soft enough to mash. Drain and set aside.

  2. Fry the onions, in a drizzle of olive oil, add the garlic and some seasoning. Once translucent, add the paprika and spring onions and saute for a further 5 mins. Next, add the mushrooms and stir to combine. Then add both beans and cook for a further 5 mins. Next add the tomatoes, sugar, and optional fresh coriander.

  3. Now mash the potatoes, with a splash of milk and seasoning. Pop the bean mixture into an oven-proof dish and spoon over the mash to cover.

  4. Bake in the oven for around 20 mins. Serve with your favorite greens and enjoy! Separate into 2 pie dishes if you like and bake fresh the next day.
