Tandoori Prawns

5 Minute Tandoori Prawns. Inspired by my fave Indian starter.

Serves: 2 Time: 5 minutes


 

Ingredients

  • 1 Tablespoon Curry Powder

  • 1 Teaspoon Ground Paprika

  • 120g Natural Yoghurt

  • 160g Raw Peeled King Prawns

  • 125g Cherry Tomatoes, halved

  • 1⁄2 Cucumber, sliced finely

  • 1 Tablespoon Mint Sauce

  • 1 x Large Naan

  • 1 Tablespoon Olive Oil

  • 1 Tablespoon Veg Oil

  • 1/2 Teaspoon Dried Chilli Flakes

  • 1 Lime, 1⁄2 juiced and 1⁄2 in wedges

Method

  1. Heat the oven to 220°C.

  2. Mix the curry powder, paprika and chilli with the 1⁄2 yoghurt and 1⁄2 of the lime juice. Once ready add the prawns to this and allow to marinate for a few minutes.

  3. Meanwhile, pop the naan in the oven to warm up. Then mix the mint sauce with the remaining yogurt and set aside.

  4. Next add the tomatoes and cucumber to a bowl, add olive oil and season to taste.

  5. Heat the veg oil in a large non-stick pan. Add the prawns and cook for around 3 mins, until the prawns are fully cooked.

  6. Serve the prawns with fresh cucumber salad, mint dressing, lime wedge and a warm naan to share!
