10 Minute Thai Beef Salad. Packs a punch, but the spice is optional. Cook your beef rare/medium-rare and thank me later!
Serves: 4 Time: 10 minutes
Ingredients
500g Beef Strips, or steak sliced
1 Lime, juiced
1 Handful Coriander, chopped
160g Spinach
1 Cucumber, sliced into discs
2 Garlic Cloves, minced
40g Brown/Black Rice per person, dry weight
5 Tablespoons Soy Sauce
3 Tablespoons Veg Oil
1 Red Chilli, sliced
1 Handful Mint, chopped
Method
Heat the rice according to the package instructions, then set aside to cool.
Meanwhile, combine the soy, lime juice, garlic, 1 tablespoon of veg oil and ½ the chilli in a bowl. Mix well and set this dressing aside.
Heat a large non-stick pan with remaining veg oil, when hot add the beef and the remaining chilli. When cooked to your liking, remove from the pan and set aside. I’d recommend 2-3 mins.
Serve the rice on plates with the fresh spinach, cucumber, coriander, mint and beef on top. Drizzle over the dressing and enjoy!
