25 Minute Thai Laksa. So warming, flavourful and surprisingly filling. Enjoy!
Serves: 4 Time: 25 minutes
Ingredients
4 Limes, juiced
400g Green Beans or Mange Tout
400g Baby Sweetcorn, halved lengthways
2 Teaspoons Veg Oil
4 Tablespoons Thai Red Curry Paste
Small Piece of Ginger, grated
2 x 400g Can Coconut Cream
800ml Veg Stock
400g Rice Noodles
1 Large Bunch of Coriander
Method
Add the veg oil in a large saucepan over medium heat. Stir in the curry paste and ginger, cooking for around 1 min, until nice and fragrant.
Then add the coconut cream and stock, mixing well.
Once the laksa base has come to a boil, add the green beans and corn, allowing to simmer for around 3 mins, until the veg is tender, then add the noodles to cook for a minute more.
Ladle the laksa into bowls, sprinkle coriander on top and a squeeze of lime.
