Thai Laksa

25 Minute Thai Laksa. So warming, flavourful and surprisingly filling. Enjoy!

Serves: 4 Time: 25 minutes



  • 4 Limes, juiced

  • 400g Green Beans or Mange Tout

  • 400g Baby Sweetcorn, halved lengthways

  • 2 Teaspoons Veg Oil

  • 4 Tablespoons Thai Red Curry Paste

  • Small Piece of Ginger, grated

  • 2 x 400g Can Coconut Cream

  • 800ml Veg Stock

  • 400g Rice Noodles

  • 1 Large Bunch of Coriander


  1. Add the veg oil in a large saucepan over medium heat. Stir in the curry paste and ginger, cooking for around 1 min, until nice and fragrant.

  2. Then add the coconut cream and stock, mixing well.

  3. Once the laksa base has come to a boil, add the green beans and corn, allowing to simmer for around 3 mins, until the veg is tender, then add the noodles to cook for a minute more.

  4. Ladle the laksa into bowls, sprinkle coriander on top and a squeeze of lime.
