Thai Turkey Wraps

20 Minute Thai Turkey Wraps. One of my original recipes from years ago and a big fave with lots of you. Lean turkey mince with a lot of flavours, it's so fresh, healthy and so good for you!


Serves: 2 Time: 20 minutes


Ingredients

  • 1 tablespoon coconut oil or olive

  • 1 red onion, chopped

  • 2 garlic cloves, chopped

  • 250g lean turkey mince

  • 3 tablespoon soy sauce

  • 3 limes, juiced

  • 1 bunch spring onions, thinly sliced

  • 2 red chillies seeded, de-veined and thinly sliced

  • Handful coriander, chopped

  • Handful mint, chopped

  • Little gem lettuce leaves


Method

  1. Heat the coconut oil over medium heat in a large non-stick pan. Lightly sauté red onion until it begins to soften for 5 minutes.

  2. Add turkey and stir-fry, then add chilli & garlic. Continue to cook until no longer pink around 15 minutes Drain any juice or fat and turn off the heat, cooling for 5 minutes.

  3. Add soy sauce, coriander, mint and lime juice to the turkey and stir. Taste for seasoning, then put in a serving bowl. To serve, put mince in a little gem leaf and top with some spring onions.
