30 Minute Toad in the Hole. Proper home comfort British food.
Serves: 2 Time: 30 minutes
Ingredients - recipe easily doubled
4 Pork Sausages
650g Potatoes, peeled and chopped into chunks
160g Tenderstem Broccoli
1 Knob of Butter
Batter
70g Plain Flour
1 Pinch Of Salt
1 Egg
90ml Milk
Method
Heat the oven to 220°C. Then pour 2 tablespoons of oil into a small roasting tin, add the sausages and allow to heat up in the oven for around 8 mins.
To make the batter, add the flour and salt in a large bowl, make a well in the middle and crack the egg into it. Slowly begin to add the milk and mix continuously until it fully combines to a thick batter consistency. Allow to stand for a few minutes.
Put the potatoes in a pan of salted water. Bring to a boil and reduce to a simmer until tender all the way through. Remove from the heat and drain, allowing them to air dry.
Meanwhile, carefully remove the roasting tin from the oven, give the batter a stir and pour it into the hot tin, around the sausages. Put the tin back into the oven and cook for around 10 mins, then reduce the heat slightly cooking for a further 20 mins until the batter has risen and is fully cooked.
Meanwhile, pop the broccoli in a pan of hot water and boil for 7 minutes, mash your potatoes with a knob of butter and set aside.
Once ready, serve the mash with the tenderstem broccoli along with the toad in the hole.
