Tofu Cashew Stir Fry

10 Minute Tofu Cashew Stir Fry. Super quick on the table and a lovely sticky sauce. Yum!

Serves: 4 Time: 10 minutes



  • 1 Tablespoon Olive Oil

  • 3 Tablespoons Sweet Chilli Sauce

  • 3 Tablespoons Soy Sauce

  • Thumb-sized piece of Ginger, grated

  • 2 Garlic Cloves, minced

  • 300g Extra-firm Tofu, drained and cubed

  • 450g Hokkien Noodles

  • 600g Mixed Vegetables, chopped (fresh or frozen)

  • 40g Unsalted Cashews


  1. Make a marinade with the sweet chilli sauce, soy sauce, ginger and garlic.

  2. Place the drained tofu into a bowl with the marinade and toss to combine. Set aside for 5 minutes.

  3. Plunge the noodles into a large bowl of boiling water and stand for 1 minute. Drain and keep warm.

  4. Heat a frying pan with the olive oil over medium-high heat. Add the marinated tofu and cook for 2–3 minutes.

  5. Next, add the vegetables and stir fry for another 2 minutes. Stir in the cashews.

  6. Once everything is done, divide the noodles between bowls and top with tofu and veggies.
