15 Minute Tofu Mie Goreng. Packed full of veggies and tofu, this super speedy recipe will hit the spot!
Serves: 2 Time: 15 minutes
Ingredients
250g Dried Ramen Noodles (the cheap ones will work fine here)
20ml Olive Oil
1⁄2 Onion, diced
1 Tablespoon Ginger, grated
1 Leek, chopped
200g Peas
200g Bean Sprouts
2 Tablespoons Sweet Soy Sauce
1 Tablespoon Chilli Paste
1 Teaspoon Cayenne Pepper
1 Egg Scrambled
300g Firm Tofu, cut into cubes
Method
Cook the noodles according to the package instructions, drain and set aside.
Heat the oil in a large wok, add garlic, ginger, onion and fry until onions are translucent.
Add the leek, peas and sprouts, cooking until tender. Add the noodles, sweet soy, cayenne. Mix well.
Add the eggs and tofu, heat thoroughly and serve.
