Tomato Pasta Soup

25 Minute Tomato Pasta Soup. Perfect for batch cooking, with a serving size of 8 - although easy to halve the recipe if needed.

Serves: 8 Time: 25 minutes


 

Ingredients

  • 2 Onions, chopped

  • 4 Celery Sticks, chopped

  • 1.4L Vegetable Stock

  • 1.5 Tablespoons Olive Oil

  • 4 Garlic Cloves, crushed

  • 2 Tablespoons Tomato Purée

  • 800g Chopped Tomatoes

  • 800g Chickpeas

  • 200g Orzo Pasta, dried weight

  • 4 Tablespoons Pesto (green or red)

Method

  1. Heat the olive oil in a large non-stick pan. Add the onion and celery, gently saute for around 10 mins. Then add the garlic cooking for 1 minute more.

  2. Next, add the remaining ingredients (apart from the pesto) and bring everything to a boil. Then reduce to simmer until the orzo is cooked fully.

  3. To serve, season well, stir through the pesto and divide between bowls!
