Tuna Loaded Wedges

35 Minute Tuna Loaded Wedges. Loaded wedges, yes please!

Serves: 2 Time: 35 minutes


 

Ingredients

  • 375g Potatoes, cut into wedges

  • 1 Tablespoons Olive Oil

  • 2 Tablespoons Mayonnaise

  • 1⁄2 Onion, very finely chopped

  • 50g Grated Cheddar

  • 1x 145g Can of Tuna, in spring water, drained

  • 1 Bunch Parsley, chopped

Method

  1. Heat oven to 220°C.

  2. Microwave the potatoes for around 10 mins, until tender. Once done, cut into wedges, toss in the oil and bake in the oven until crisp, around 25 mins.

  3. Meanwhile, mix the mayonnaise, onion, tuna, cheese and parsley.

  4. Once the potatoes are nice and crisp, put them into a large oven dish, cover with the tuna mixture and pop under the grill to heat through.

  5. Serve and enjoy with extra salad if you like.
