Turkey Super Spuds

40 Minute Turkey Super Spuds. A classic jacket potato and chilli for a cold day, perfect comfort food.


Serves: 4 Time: 40 minutes


 

Ingredients

  • 4 Medium Sized Jacket Potatoes

  • 1 Tablespoon Olive Oil

  • 1 Medium Sized Onion, diced

  • 1 Garlic Clove, minced

  • 300g Turkey Mince

  • 1 Tablespoon Smoked Paprika

  • 400g Can Tomatoes

  • 4 Spring Onions, sliced


Method

  1. Heat the oven to 200°C.

  2. Microwave the potatoes for around 10 minutes until tender, then put a drop of oil and some seasoning in a bowl and coat the potatoes well. Next, whack them into the oven to continue cooking and crisp up for around 30 minutes.

  3. Meanwhile, heat the rest of the oil in a large frying pan over medium heat. When the oil is hot add the onion and garlic. Allowing the onion to sweat and become translucent. After around 6 minutes add the Turkey mince and season. Making sure you break the mince up so it doesn't cook in chunks. Increase the heat and allow to cook fully.

  4. Add the spices and the can of tomatoes then reduce the heat to allow it to simmer for around 10 minutes.

  5. Once the potatoes are ready, you can serve the chilli on top with some sliced spring onion for garnish!
