20 Minute Turkish One Pan Eggs & Peppers. So easy to make and perfect for a weekend brunch!

Serves: 4 Time: 20 minutes
Ingredients
2 tablespoons olive oil
2 onions, sliced
1 red or green pepper, deseeded and sliced
1-2 red chillies, deseeded and sliced
400g can chopped tomatoes
1-2 tsp caster sugar
4 eggs
small bunch parsley, roughly chopped
6 tablespoons thick yogurt, mixed with 2 crushed garlic cloves
Method
Heat the oil in a large frying pan, then stir in the onions, pepper and chillies. Cook until they begin to soften.
Next, throw in the tomatoes and sugar, mixing well. Cook until the liquid has reduced then season with salt and pepper.
Use a spoon and make 4 pockets in the pan and crack the eggs into them. Cover the pan and cook the eggs over a low heat until they have set.
Sprinkle over the parsley and serve with the yoghurt and garlic on the side.
