Tuscan Salad

10 Minute Tuscan Salad. Perfect for lunch or dinner, this salad has everything you want and more.

Serves: 4 Time: 10 minutes



  • 4 Ciabatta Rolls, torn into chunks

  • Handful Basil, chopped

  • 60g Pitted Black Olives, chopped

  • 250g Mozzarella Ball, chopped

  • 500g Cherry Tomatoes, halved

  • 2 Red Onions, sliced

  • 60g Capers (optional)

  • 2 Tablespoons Dried Oregano

  • 3 Tablespoons Olive Oil

  • Balsamic Vinegar to serve


  1. Heat the grill to high. Then pop the ciabatta chunks onto a tray, drizzle 3 tablespoons of olive oil over the top then grill until crispy for 10 minutes.

  2. Meanwhile, pop the basil, mozzarella, onion, tomatoes, olives, capers and oregano in a large bowl.

  3. When the ciabatta is done add this to the bowl and mix well. Serve in bowls, season well and drizzle over balsamic vinegar. Easy, enjoy!
