10 Minute Tuscan Salad. Perfect for lunch or dinner, this salad has everything you want and more.
Serves: 4 Time: 10 minutes
Ingredients
4 Ciabatta Rolls, torn into chunks
Handful Basil, chopped
60g Pitted Black Olives, chopped
250g Mozzarella Ball, chopped
500g Cherry Tomatoes, halved
2 Red Onions, sliced
60g Capers (optional)
2 Tablespoons Dried Oregano
3 Tablespoons Olive Oil
Balsamic Vinegar to serve
Method
Heat the grill to high. Then pop the ciabatta chunks onto a tray, drizzle 3 tablespoons of olive oil over the top then grill until crispy for 10 minutes.
Meanwhile, pop the basil, mozzarella, onion, tomatoes, olives, capers and oregano in a large bowl.
When the ciabatta is done add this to the bowl and mix well. Serve in bowls, season well and drizzle over balsamic vinegar. Easy, enjoy!
