Vegan Peanut Tofu

Vegan 15 minute dish perfect for dinner.

Serves: 4 Time: 15 minutes



  • 1 tbsp olive oil

  • 400g tenderstem broccoli

  • 350g firm tofu

For the sauce:

  • 65g peanut butter

  • 2 tbsp tamari or soy sauce

  • 2 tbsp water

  • 5 tbsp honey

  • 1 tsp sesame oil

  • ½ tsp chilli flakes

  • 1 tbsp ginger, grated/minced

  • 50g rice per person, dry weight


  1. Firstly, prepare the tofu by draining the water. Sandwich it between two paper towels and two plates. Place a heavy item on top of the plate and press it down for 30 mins.

  2. Cut the tofu into 1.25cm cubes.

  3. Mix all the sauce ingredients and set aside.

  4. Cook your rice per pack instructions, and steam your broccoli.

  5. Meanwhile, heat the oil in a pan on medium heat, and cook the tofu for 10-15 mins, turning occasionally until browned.

  6. Once done, throw in the prepared sauce and stir well, let it bubble a little and then remove from the heat.

  7. Serve with your rice and steamed veggies, done!
