25 Minute Vegetarian Paella. Perfect for Spring weather, so fresh and healthy!
Serves: 2 (easily doubled) Time: 25 minutes
Ingredients
2 tsp olive oil
1 small red onion, finely diced
1 clove garlic, crushed
1 small red bell pepper, deseeded & chopped
1 small green bell pepper, deseeded & chopped
1 tsp smoked paprika
100g arborio rice
280mls vegetable stock
120g canned sweetcorn, drained
200g canned kidney or black beans, drained & rinsed
50g of peas, fresh or defrosted
1 lemon small bunch fresh coriander, roughly chopped
Method
Heat oil in a wide, deep pan and cook onion, garlic, peppers and spices for a few minutes until soft.
Add rice and saute for a minute, then add stock, sweetcorn and beans and bring to a low, gentle simmer. Cover and cook for 15 minutes.
Add peas and cook for a few minutes uncovered until all the stock has been absorbed. (You may need to cook uncovered if too wet for a minute or two or add a little more water if too dry)
Remove from heat, and add lemon juice and coriander leaves to serve.
