Veggie BLT Sandwich

30 Minute Veggie BLT Sandwich. Ooooff what a treat - perfect for lunch. Veggie twist on a classic, or you could use 'facon'

Serves: 2 Time: 30 minutes



For The Facon - or use shop- bought Facon

  • 1 Aubergine, cut finely lengthways

  • 1 Tablespoon Olive Oil

  • 1 Teaspoon Soy

  • 1⁄2 Tablespoon Worcestershire (or vegan alternative)

  • 1⁄2 Tablespoon Maple Syrup or Honey

  • 1⁄2 Teaspoon Smoked Paprika

  • 1⁄2 Teaspoon Garlic Powder

  • Salt and Pepper


  • 4 Slices of Crusty Grainy Bread

  • 1 Beef Tomato, sliced

  • 4 Lettuce Leaves

  • 2 Tablespoons Mayonnaise


  1. Heat the oven to 200°C

  2. Combine all the ingredients for the facon together, then roast in the oven for 30 minutes until nice and crisp. Being careful not to burn them.

  3. Once ready, build your BLT in your crusty bread with the remaining ingredients, serve and enjoy!
