10 Minute Veggie Fritters. Pan fried little fritters of heaven, served with a fried egg! Yummy for lunch or dinner.
Serves: 2 Time: 10 minutes
Ingredients
1 Courgette, grated
3 Eggs, 1 separated, 2 fried
1 Bag of Rocket, or other salad
1⁄2 Carrot, peeled and grated
200g Potatoes, peeled and grated
60g Canned Sweetcorn, drained
1⁄2 Onion, chopped
40g Self-Raising Flour
1⁄4 Teaspoon Salt
1 Handful Parsley, chopped (optional)
1 Tablespoon Olive Oil
Method
In a large bowl, combine the potatoes, courgette, sweetcorn, onion, flour, salt, parsley and egg yolks.
Place egg whites into a separate bowl and beat until stiff peaks form.
Fold the vegetable mixture in with the beaten egg white mixture.
Heat the oil in a large pan over medium heat. Add the mixture in batches making individual patties. When one side is brown, flip them and cook for a further few minutes browning both sides. Approx 5 mins on each side.
Serve with a rocket salad and a fried egg on top!
If taking to work for lunch the fried egg is optional. You can make these in batches and freeze before cooking.
