Veggie Fry Up

20 Minute Veggie Fry Up. So fresh and easy to make - perfect for a weekend brunch.

Serves: 2 Time: 20 minutes


 

Ingredients

  • 4 Large Field Mushrooms, chopped

  • 4 Tomatoes, halved

  • 1 Garlic Clove, thinly sliced

  • 2 Teaspoon Olive Oil

  • 200g Fresh Spinach

  • 4 Eggs

  • 2 Tablespoons Pine Nuts (optional)

Method

  1. Heat the oven to 200°C.

  2. Throw the mushrooms and tomatoes into an ovenproof dish. Next sprinkle garlic over the veggies, drizzle over the oil, season well, then whack in the oven for 10 mins.

  3. Put the spinach into a large colander, then pour a kettle of boiling water to wilt it. Squeezing out any excess water.

  4. Add the spinach to the dish with the mushrooms and tomatoes. Make a little gap between the veggies and crack the eggs in the gaps.

  5. Return the dish to the oven and cook for a further 10 mins, until the eggs are cooked.

  6. Finally, sprinkle the pine nuts over and Bob’s your Uncle!
